Beetroot Curry


Though this curry has other veggies too, we call this beetroot curry since beetroot dominates and is the differentiating factor in this mixed veg curry. It also gives its unique red colour to this curry.


We have already seen the huge benefits that beetroot gives us in this earlier post on beetroot pachadi.

So let’s straight away get into the preparation of this curry.



Ingredients:
Beetroot - 1 no.
Carrot - 2 nos.
Tomato - 1 no
Potato - 2nos.
Onion - 2 nos.
Turmeric powder - 1 teaspoon
Chilly powder - 1/4 teaspoon
Green chilly - 2 nos.
Pepper powder - 1 teaspoon
Coriander powder - 1/2 teaspoon
Curry leaves - 4-6 nos.
Dry Red chillies - 2 nos.
Salt to taste

Process:

Chop the Beetroot, Carrot, and Potato into small cubes of equal size (around 1.5 cms) and keep it aside.  Chop the Tomato and onion into small pieces and keep them aside.

Take a frying pan and pour 2 tablespoons oil into it. Once the oil is hot, put 1 teaspoon mustard. Wait till the mustard splutters. Once the mustard splutters, break and add the dry red chillies into it and mix for it to get fried.  After that add the curry leaves and onions into the pan. Add salt to the onions while sautéing since this speeds up the process.  

Sauté till the chopped onions turn brown

Put the chopped tomatoes into the pan; allow the tomatoes also to get fried.  

Once the tomatoes are sautéed, add the chopped beetroot, carrots and potatoes into the pan. Add turmeric powder, chilly powder, pepper powder and coriander powder. Also, cut the green chillies vertically and add to the pan. Sprinkle a handful of water and mix well. Close the pan with the lid.

After around 10 minutes, open the lid and check whether the vegetables are cooked. The beetroot takes the longest to cook, hence check if the beetroot has got cooked or not.
If cooked, stir well and leave it for few minutes in the frying pan for it to get little fried. This enhances the taste to a very great extent.

Beetroot curry is ready.

Serves 4-5 members. It is a very good side dish for chapattis and a healthy one too.
